Give Your Mornings a Kick

Start off the year, and your mornings, right with this delicious, easy breakfast, submitted by Kim from SimplyStarving.com. The Laughing Cow® gives these scrambled eggs a creamy flavor and a bit of a spicy kick. Combine with whole grain toast and a glass of orange juice to round out your meal.

Creamy Scrambled Eggs with a Kick

Ingredients (makes one serving):
4 whole egg whites
1 teaspoon dijon mustard
1 whole wedge of The Laughing Cow® Light Queso Fresco & Chipotle
pepper to taste

Directions:
In a small bowl, mix together egg whites and mustard. Gently break The Laughing Cow® cheese wedge in pieces and add to the egg mixture.

Heat up a small skillet to medium heat and spray with cooking spray. Add in egg mixture and scramble until eggs are cooked through and The Laughing Cow® cheese is melted and evenly distributed.

Once cooked, add pepper (and salt if needed) to taste.

PER SERVING: 118 calories, 3g fat, 494 mg sodium, 4g carbs, 0g fiber, 2g sugar, 16 g protein

The Cheese Has Taken On a Personality of Its Own!

The Laughing Cow® recently hosted an online "Bring SnackJoy to Life Personality Contest" in which more than 30 bloggers came up with a personality description, in 120 characters or less, for one of five select flavors of The Laughing Cow® and Mini Babybel®. We then opened up voting to the online community and the results were astounding, with more than 23,000 votes submitted! Check out the five winning personality descriptions here.
